Extracts (alcohol-based) retain their potency for 3-5 years or more. Herbal oils are best kept in the refrigerator.
An extract is a substance made by extracting a part of a raw material, often by using a solvent such as ethanol, oil or water. Extracts may be sold as tinctures, absolutes or in powder form.
The principle behind solvent extraction is extremely basic. The goal is to use a liquid (solvent) to dissolve (solvate) a target molecule or group of compounds (solute) and to wash them out of the solid plant material. The solvent is then separated from the solute in order to concentrate the solute.
Spice extracts can be used in teas, soups, vegetable dishes, sauces, pickles and marinades for quicker flavor absorption.
The first method of extracting flavour from your whole spices involves toasting and grinding. To toast whole spices, pour them into a cold frying pan (a pre-heated frying pan will burn them quickly). Turn the heat to medium or medium low and just start warming them gently, giving them a toss every minute or so.
